Ingredients

Toast
Slices of toast

Peanut butter
Jelly
Banana
1/2
Batter
Flour
30 g
Soy Milk
50 ml
Vanilla Extract
1/2 tspn
Cinnamon
1/2 tspn
Salt
1 pinch of
Crust
Oats
15 g
Popped Amaranth
5 g
Other
Plant based margarine
Maple syrup
Goji berries

Steps

    Prepare the toast
  1. Spread one slice of toast with peanut butter
  2. Add a layer of banana slices on top (keep the rest for garnishing)
  3. Spread the second slice with jelly
  4. Assemble both slices to a sandwich
Prepare the batter and coating
  1. Add the batter ingredients to a tray and stir until combined
  2. Mix the crunchy ingredients in a separate tray
Finish
  1. Gently roll the toast in the batter until it soaks up as much as possible
  2. Turn it in the coating mixture until the toast is covered with it as much as possible - yes, this is messy but it's woth it!!
  3. Heat some margarine in a pan and fry the toast on both sides until golden brown
  4. Cut it diagonal in two pieces and garnish it with the rest of the banana, maple syrup and goji berries - or anything you like
